Guatemalan producers are known for their passion to grow exceptional coffees, based in the long-standing coffee traditions, Mayan heritage and a spirit for innovation. La Conserva community blend is born from this spirit and strive for change that can be found in much of Central America. This coffee is the result of experiments carried out by PECA team and the producers. These were focused on extending fermentation times in cherry, matched with submerged fermentation. This approach represented a significant change compared to the traditional form of processing carried out by producers all over the country and results in a super clean and fragrant cup.
