High quality cherries are selected at their optimal ripeness from 915 small plot growers who reside in the surrounding areas.\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003eProcessing Steps:\u003cbr\u003e1. Cherry selection. Measure brix (sugar) content of the cherries. Brix \u0026gt;20 only.\u003cbr\u003e2. Mechanical cherry sorting. Ripe cherries are sorted from green and other impurities.\u003cbr\u003e3. Float cherries and remove floaters.\u003cbr\u003e4. Let cherries dry for 48hrs inside on shaded drying beds.\u003cbr\u003e5. Wash plastic tankers and smoke them with olive tree trunks.\u003cbr\u003e6. Put cherries inside the smoked tanker and quench with water.\u003cbr\u003e7. Ferment for 48hrs. (24hrs anaerobic fermentation and 24hrs aerobic fermentation).\u003cbr\u003e8.
