In the northern region of Peru, in the province of Jaén, we meet Elias Sanchez and his wife, Rosalina Saavedra. Together with their sons, they welcome us to their farm, El Eucalipto, where their coffee trees grow and where family plays a central role in daily work. Elias has dedicated 24 years of his life to coffee farming. He began with traditional commercial coffee production, planting his trees, waiting for them to bear fruit, and processing the cherries empirically. Over time, Elias joined a project that allowed him to deepen his understanding of coffee production, from planting and cherry picking to processing and drying. Five years ago, he made an important decision to focus on quality and transition into the specialty coffee market. This shift marked a turning point in his journey.knowledge is the key to producing great quality coffee. In recent years, Elias has been supported by the guidance of a PECA technician, whose advice has been key in transforming his farm from an empirical operation into one driven by knowledge and best practices. Through this process, he has strengthened his skills in farm management and improved techniques across pre-harvest, harvest, and post-harvest stages, significantly raising coffee quality. Today, Elias works side by side with his wife and sons, each contributing to the farm’s development. His future goals include planting new varieties and improving the drying station. Thanks to quality coffee, Elias has improved his family’s quality of life and remains committed to learning through trial and error. As he says, his coffee is produced with care, dedication, and respect for the land.
